Certaines recommandations allaient m\u00eame jusqu\u2019\u00e0 limiter la consommation \u00e0 trois \u0153ufs par semaine.<\/p>\n\n\n\n<p>R\u00e9sultat ? Beaucoup de personnes ont supprim\u00e9 un aliment extr\u00eamement nutritif\u2026 en pensant prot\u00e9ger leur sant\u00e9.<\/p>\n\n\n\n<p>Pourtant, lorsque l\u2019on regarde de pr\u00e8s les donn\u00e9es scientifiques, l\u2019histoire est bien plus nuanc\u00e9e. Et surtout, elle r\u00e9v\u00e8le l\u2019une des plus grandes erreurs nutritionnelles du XXe si\u00e8cle.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L\u2019\u00e9tude qui a tout chang\u00e9\u2026 et sem\u00e9 la confusion<\/h2>\n\n\n\n<p>En 1961, le physiologiste am\u00e9ricain Ancel Keys publie ses travaux sur le lien entre graisses satur\u00e9es, cholest\u00e9rol et maladies cardiovasculaires.<\/p>\n\n\n\n<p>Sa c\u00e9l\u00e8bre <em>Seven Countries Study<\/em> devient rapidement la r\u00e9f\u00e9rence mondiale. L\u2019id\u00e9e s\u2019impose alors : plus on mange de graisses satur\u00e9es et de cholest\u00e9rol, plus le risque cardiovasculaire augmente.<\/p>\n\n\n\n<p>Le probl\u00e8me ?<\/p>\n\n\n\n<p>L\u2019\u00e9tude reposait sur une corr\u00e9lation entre seulement 7 pays\u2026 alors que des donn\u00e9es existaient pour 22 pays.<\/p>\n\n\n\n<p>Les pays qui confirmaient l\u2019hypoth\u00e8se ont \u00e9t\u00e9 retenus. Les autres ont \u00e9t\u00e9 \u00e9cart\u00e9s.<\/p>\n\n\n\n<p>D\u00e8s 1957, Jacob Yerushalmy et Herman E. Hilleboe avaient pourtant signal\u00e9 ce biais m\u00e9thodologique dans le <em>New York State Journal of Medicine<\/em>.<\/p>\n\n\n\n<p>Cependant, une fois les recommandations nutritionnelles lanc\u00e9es, la machine institutionnelle \u00e9tait d\u00e9j\u00e0 en route.<\/p>\n\n\n\n<p>Le jaune d\u2019\u0153uf devient alors l\u2019ennemi public num\u00e9ro un.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce que la physiologie montre r\u00e9ellement<\/h2>\n\n\n\n<p>Le corps humain n\u2019est pas un simple robinet dans lequel le cholest\u00e9rol alimentaire viendrait directement boucher les art\u00e8res.<\/p>\n\n\n\n<p>En r\u00e9alit\u00e9, le foie produit lui-m\u00eame environ 70 \u00e0 80 % du cholest\u00e9rol circulant.<\/p>\n\n\n\n<p>Et surtout, il poss\u00e8de un syst\u00e8me de r\u00e9gulation extr\u00eamement pr\u00e9cis.<\/p>\n\n\n\n<p>Lorsque l\u2019apport alimentaire en cholest\u00e9rol augmente, le foie r\u00e9duit naturellement sa propre production. Ce m\u00e9canisme s\u2019appelle la r\u00e9gulation endog\u00e8ne du cholest\u00e9rol.<\/p>\n\n\n\n<p>Autrement dit : chez la majorit\u00e9 des personnes, manger des \u0153ufs n\u2019entra\u00eene pas une explosion du cholest\u00e9rol sanguin.<\/p>\n\n\n\n<p>Les chercheurs distinguent g\u00e9n\u00e9ralement :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>les <strong>hypor\u00e9pondeurs<\/strong> (environ 70 % de la population), chez qui les \u0153ufs ont peu d\u2019effet sur le LDL ;<\/li>\n\n\n\n<li>les <strong>hyperr\u00e9pondeurs<\/strong> (environ 30 %), chez qui le LDL peut l\u00e9g\u00e8rement augmenter\u2026 mais avec une hausse parall\u00e8le du HDL, le \u201cbon\u201d cholest\u00e9rol.<\/li>\n<\/ul>\n\n\n\n<p>Ainsi, le ratio LDL\/HDL \u2014 consid\u00e9r\u00e9 comme plus pertinent pour \u00e9valuer le risque cardiovasculaire \u2014 reste souvent stable, voire s\u2019am\u00e9liore.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce que les \u00e9tudes r\u00e9centes disent sur les \u0153ufs<\/h2>\n\n\n\n<p>Depuis plusieurs ann\u00e9es, les recherches scientifiques r\u00e9\u00e9valuent s\u00e9rieusement les anciennes recommandations.<\/p>\n\n\n\n<p>En 2019, Luc Djouss\u00e9 et J. Michael Gaziano publient une revue dans <em>Current Opinion in Clinical Nutrition and Metabolic Care<\/em>. Leur conclusion : il n\u2019existe pas de lien causal clair entre la consommation d\u2019\u0153ufs entiers et le risque cardiovasculaire dans la population g\u00e9n\u00e9rale.<\/p>\n\n\n\n<p>Par ailleurs, une m\u00e9ta-analyse men\u00e9e par Chayakrit Krittanawong et ses coll\u00e8gues, publi\u00e9e dans <em>Current Problems in Cardiology<\/em> en 2021 et portant sur plus de 500 000 personnes, ne retrouve pas d\u2019association significative entre consommation d\u2019\u0153ufs et risque d\u2019infarctus ou d\u2019AVC.<\/p>\n\n\n\n<p>Autrement dit : les \u0153ufs ont longtemps \u00e9t\u00e9 condamn\u00e9s sur des bases scientifiques fragiles.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pourquoi le jaune d\u2019\u0153uf est en r\u00e9alit\u00e9 tr\u00e8s int\u00e9ressant<\/h2>\n\n\n\n<p>Pendant des ann\u00e9es, beaucoup de personnes ont retir\u00e9 le jaune pour ne manger que le blanc.<\/p>\n\n\n\n<p>C\u2019est pourtant dans le jaune que se trouvent la majorit\u00e9 des nutriments.<\/p>\n\n\n\n<p>Le jaune d\u2019\u0153uf contient notamment :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>de la <strong>choline<\/strong>, essentielle au cerveau et au foie ;<\/li>\n\n\n\n<li>de la <strong>lut\u00e9ine<\/strong> et de la <strong>z\u00e9axanthine<\/strong>, protectrices de la r\u00e9tine ;<\/li>\n\n\n\n<li>de la <strong>vitamine D<\/strong> ;<\/li>\n\n\n\n<li>de la <strong>vitamine B12<\/strong> ;<\/li>\n\n\n\n<li>du <strong>zinc<\/strong> ;<\/li>\n\n\n\n<li>du <strong>s\u00e9l\u00e9nium<\/strong> ;<\/li>\n\n\n\n<li>des acides gras monoinsatur\u00e9s ;<\/li>\n\n\n\n<li>des prot\u00e9ines compl\u00e8tes avec un excellent profil d\u2019acides amin\u00e9s.<\/li>\n<\/ul>\n\n\n\n<p>Difficile de faire plus dense nutritionnellement\u2026 surtout pour un co\u00fbt aussi faible.<\/p>\n\n\n\n<p>D\u2019ailleurs, l\u2019\u0153uf entier reste aujourd\u2019hui l\u2019un des aliments offrant le meilleur rapport qualit\u00e9 nutritionnelle\/prix.<\/p>\n\n\n\n<p>Et non, cela ne veut pas dire qu\u2019il faut manger une omelette de 18 \u0153ufs matin, midi et soir.
